LOCATION
Just fifteen minutes north of the airport, on the western edge of the island, we’ll find ourselves with postcard views. These are views we’ll be able to enjoy at every turn of our stay at Kimpton Seafire Resort + Spa. Boasting a prime location on Seven Mile Beach, the golden mile of the Cayman Islands, this spot is often voted one of, if not THE, best beach in the Caribbean. I’m partial to Trinidad & tobago, but I digress….
OUR ROOM
The modish interiors cut a sharp and stylish picture inside. Every room is filled with chic contemporary fittings and splashed with lustworthy art. Elegant creme walls and rich jewel tones make the dancing brilliant turquoise waters seen from the floor-to-ceiling windows appear even brighter. I’m torn between the suites with their ocean-view wraparound balconies or the super slick bungalows where we have the vanilla-white sands of Seven Mile Beach literally on our doorstep for toes-in-sand utopia.
WHY I LIKE IT
If we’re looking for a modern take on the beachside bungalow, Seafire is the most stylish abode around. But it is the exceptional cuisine that is the biggest draw. On an island already renowned for its fabulous dining, Executive Chef Massimo De Francesca has raised the stakes with his innovative Spanish-inspired fare at Avecita, which he pairs with inspired cocktails. Inspired! A spot on the 10-seat counter in front of the kitchen is one of the hottest restaurant seats in the Caribbean.
